Welcome to Shai Barbut from Guelph University

The DISTAL welcomes Shai Barbut as ISA Visiting fellow. He will stay in Cesena from May and June 2023. Shai Barbut is a professor in the Food Science Department, the University of Guelph in Ontario Canada, and has an appointment at the Wageningen University in The Netherlands. His research focuses on factor affecting meat quality, as well as protein gelation with emphasis on structure / function relationships, rheology, and food safety.
