The project studies product, process and organizational innovations aimed at favoring an economic and market development of the Italian oyster sector, characterized by environmental and social sustainability. At the same time, solutions are being sought to overcome the main obstacles that limit and slow down the development of oyster farming in the various sites along the Italian coasts. The activities that will be carried out are highly diversified according to a multidisciplinary research approach on the subject. The project ha salso the aim to set up a transversal national network between companies located in different Italian regions and research institutions in order to undertake a constructive exchange of information and experiences to improve the Italian oyster sector competitiveness.
